From a cacao cooperative in Matiguas, Dave Mason (Black Mountain Chocolate) gets the raw material. In his small Swannanoa factory, he crafts it into 70% cacao couverture. Its flavor profile includes honey, nuts, and… buttered toast.
70% cacao Nicaraguan dark chocolate (Nicaraguan cacao beans*, cane sugar*, cocoa butter*, sunflower lecithin), cream* (cream* (milk), sea vegetable-based carrageenan), agave*.
*certified organic.

We encourage you to taste in at least two bites. Notice as your first impression gives way to a more complete picture. Close your eyes and inhale deeply. Coat your whole mouth with chocolate, and exhale through your nose to fully release the aromatics. Some of the flavors unfold in layers, with the finish lasting long after you’ve taken a bite.
